Ingredients

  • 4 Irish potatoes
  • 2 Tbsp. butter, melted
  • 2 Tbsp. flour
  • 1 c. milk
  • 1/4 tsp. salt
  • 1/2 c. grated cheese
  • 1/2 c. cooked peas
  • 1/2 c. cooked chopped carrots
  • 1/4 c. diced green peppers
  • paprika
  • 3 c. bread crumbs

Method

  • Bake potatoes until done.
  • Melt butter; stir in flour and milk.
  • Add salt, cheese, peas, carrots and peppers.
  • Cut the potatoes lengthwise into halves.
  • Remove the pulp without breaking the skin.
  • Mash the pulp and add it to the vegetable mixture. Season with paprika.
  • Fill the shells with mixture.
  • Top with bread crumbs browned in butter.
  • Place the potatoes in oven at 400° until the tops are brown.
  • Goes great with lamb chops or ham.
