Ingredients

  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 3/4 c. all-purpose flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. ginger

Method

  • Place eggs in bowl.
  • Beat for 1 minute at medium speed. Gradually sprinkle in sugar and beat for 4 minutes.
  • Reduce to stirring and add pumpkin.
  • Stop and scrape bowl.
  • Combine flour, baking powder, cinnamon, nutmeg and ginger.
  • Stir together with mixer, and gradually add flour mixture to egg mixture for about 1 minute.
  • Line a 9 x 13- x 3/4-inch jelly roll pan with waxed paper and grease.
  • Pour the mixture into the pan and bake at 375° for 12 to 13 minutes.
  • Remove from the oven and immediately turn onto a towel sprinkled with powdered sugar.
  • Remove the waxed paper and roll the cake and towel together; cool completely.
