Ingredients
- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 3/4 c. all-purpose flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. ginger
Method
- Place eggs in bowl.
- Beat for 1 minute at medium speed. Gradually sprinkle in sugar and beat for 4 minutes.
- Reduce to stirring and add pumpkin.
- Stop and scrape bowl.
- Combine flour, baking powder, cinnamon, nutmeg and ginger.
- Stir together with mixer, and gradually add flour mixture to egg mixture for about 1 minute.
- Line a 9 x 13- x 3/4-inch jelly roll pan with waxed paper and grease.
- Pour the mixture into the pan and bake at 375° for 12 to 13 minutes.
- Remove from the oven and immediately turn onto a towel sprinkled with powdered sugar.
- Remove the waxed paper and roll the cake and towel together; cool completely.
