Ingredients

  • 4 c. unsifted flour
  • 1 tsp. cream of tartar
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 eggs
  • 1 c. butter
  • 1 tsp. vanilla
  • 1 c. salad oil
  • 1 c. confectioners sugar
  • granulated sugar

Method

  • In medium bowl, combine first 4 ingredients; set aside.
  • In large mixer bowl with mixer at medium speed, cream butter, salad oil, confectioners sugar and 1 cup granulated sugar until light and fluffy.
  • Add eggs and vanilla and continue beating, scraping sides of bowl occasionally.
  • Gradually add dry ingredients and continue mixing until just combined.
  • Wrap and refrigerate dough at least 1 hour.
  • Preheat oven to 350°.
  • Grease 2 large cookie sheets; set aside.
  • Shape dough into 1-inch balls and roll in additional granulated sugar.
  • Place on cookie sheets.
  • Press each ball with a fork.
  • Bake 10 to 12 minutes.
  • Remove immediately to wire racks to cool.
  • Makes 12 dozen.
