Ingredients
- 4 c. unsifted flour
- 1 tsp. cream of tartar
- 1 tsp. salt
- 1 tsp. baking soda
- 2 eggs
- 1 c. butter
- 1 tsp. vanilla
- 1 c. salad oil
- 1 c. confectioners sugar
- granulated sugar
Method
- In medium bowl, combine first 4 ingredients; set aside.
- In large mixer bowl with mixer at medium speed, cream butter, salad oil, confectioners sugar and 1 cup granulated sugar until light and fluffy.
- Add eggs and vanilla and continue beating, scraping sides of bowl occasionally.
- Gradually add dry ingredients and continue mixing until just combined.
- Wrap and refrigerate dough at least 1 hour.
- Preheat oven to 350°.
- Grease 2 large cookie sheets; set aside.
- Shape dough into 1-inch balls and roll in additional granulated sugar.
- Place on cookie sheets.
- Press each ball with a fork.
- Bake 10 to 12 minutes.
- Remove immediately to wire racks to cool.
- Makes 12 dozen.
