Ingredients

  • 4 ounce. skinned, boneless chicken breast
  • 1 ounce. Italian dressing (low calorie)
  • 2 tomatoes, sliced 1/4" thick
  • 1 tbsp. Italian bread crumbs
  • 1/2 teaspoon minced basil
  • 1 teaspoon Parmesan cheese
  • 1/2 c. cooked angel hair pasta
  • 1/4 c. frzn green peas
  • 1/2 teaspoon extra virgin olive oil

Method

  • Preheat oven to 400 degrees.
  • Marinate chicken in Italian dressing for 2 hrs.
  • Place chicken breast on baking pan and top with Italian dressing.
  • Cook approximately 10 min, then top with tomato slices, bread crumbs, basil and Parmesan cheese.
  • Continue to bake till bread crumbs are browned and chicken is done.
  • While chicken is baking, quickly saute/fry angel hair pasta and green peas in extra virgin olive oil over brisk heat.
  • Serve cooked chicken over heated pasta.
  • Serves 1.
