Ingredients

  • 1 x (3-lb) chicken
  • 2 x Onions
  • 1 x Clove garlic
  • 2 slc Fresh ginger root
  • 2 Tbsp. Oil
  • 3 Tbsp. Oil
  • 1 Tbsp. Flour
  • 1 x -(up to)
  • 2 Tbsp. Curry pwdr
  • 1 Tbsp. Sugar
  • 2 Tbsp. Soy sauce
  • 2 c. Stock
  • 1/2 tsp Salt
  • 2 x Cloves star anise
  • 1 lb Potatoes

Method

  • 1.
  • Bone chicken and cut in 2-inch cubes.
  • Separately mince onions, garlic and ginger root.
  • 2.
  • Heat oil.
  • Add in onions; stir-fry to brown lightly; then remove from pan.
  • Heat remaining oil; add in garlic and stir-fry a few times.
  • Then stir in ginger, flour and curry to blend.
  • 3.
  • Return onions and stir in 1 minute over low leat.
  • Add in chicken.
  • Raise heat to medium and gently stir in 3 min to coat.
  • 4.
  • Add in sugar, soy sauce, stock, salt and star anise.
  • Bring to a boil; then simmer, covered, 20 min.
  • 5.
  • Meanwhile peel potatoes and cut in 1-1/2 inch cubes.
  • Then add in to pan and simmer, covered, till done (about 20 min).
