Ingredients

  • 1 tsp Vegetable Oil Cooking Spray
  • 1/2 c. Red Onion, Minced
  • 1 1/2 tsp Chopped Fresh Thyme Or possibly
  • 1/2 tsp Dry Thyme
  • 1/2 tsp Salt, Divided
  • 4 x 4-Ounce skinned and boned chicken breast halves
  • 1/3 c. Seedless Boysenberry Preserves
  • 2 Tbsp. Balsamic Vinegar
  • 1/4 tsp Pepper

Method

  • Heat oil in a large nonstick skillet coated with cooking spray over medium high heat till warm.
  • Add in onion; saute/fry 5 min.
  • Combine thyme and 1/4 t salt; sprinkle over chicken.
  • Add in chicken to skillet; saute/fry 6 min on each side or possibly till done.
  • Remove chicken from skillet; keep hot.
  • Reduce heat to medium-low.
  • Add in 1/4 t salt, preserves, vinegar, and pepper, stirring constantly till the preserves heat.
  • Spoon Boysenberry sauce over chicken.
  • NOTES : Other fruit preserves, such as apricot, boysenberry, or possibly peach, will also work in this recipe.
