- 1 tsp Vegetable Oil Cooking Spray
- 1/2 c. Red Onion, Minced
- 1 1/2 tsp Chopped Fresh Thyme Or possibly
- 1/2 tsp Dry Thyme
- 1/2 tsp Salt, Divided
- 4 x 4-Ounce skinned and boned chicken breast halves
- 1/3 c. Seedless Boysenberry Preserves
- 2 Tbsp. Balsamic Vinegar
- 1/4 tsp Pepper
Method
- Heat oil in a large nonstick skillet coated with cooking spray over medium high heat till warm.
- Add in onion; saute/fry 5 min.
- Combine thyme and 1/4 t salt; sprinkle over chicken.
- Add in chicken to skillet; saute/fry 6 min on each side or possibly till done.
- Remove chicken from skillet; keep hot.
- Reduce heat to medium-low.
- Add in 1/4 t salt, preserves, vinegar, and pepper, stirring constantly till the preserves heat.
- Spoon Boysenberry sauce over chicken.
- NOTES : Other fruit preserves, such as apricot, boysenberry, or possibly peach, will also work in this recipe.
