- 1 lb. ground beef
- 1/4 c. chopped onion
- 4 c. beef broth
- 1 (10 oz.) pkg. frozen vegetables
- 1 (7 1/2 oz.) can tomatoes
- 2/3 c. cubed, peeled potato
- 1/2 c. sliced celery
- 1/2 tsp. dried marjoram
- 1/2 tsp. oregano
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 bay leaf
Method
- In a large Dutch oven or kettle, cook beef and onion until beef is brown and onion is tender.
- Drain fat.
- Stir in remaining ingredients.
- Cover; simmer for 15 to 20 minutes or until vegetables are tender.
- Discard bay leaf.
- Makes 4 servings.
