- 4 slices bacon
- 1 c. chopped onion
- 1 clove garlic, minced
- 2 cans (15 oz. each) pinto beans
- 1/2 c. water
- 1/4 c. tomato ketchup
- 1/4 c. molasses
- 1 Tbsp. Dijon mustard
- 1/2 tsp. powdered ginger
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Method
- Slice bacon into 1/2-inch strips.
- Saute bacon, onion and garlic for 5 minutes.
- Drain beans.
- Combine beans, onion mixture and remaining ingredients in a 1-quart casserole dish.
- Bake, covered, at 350° for 30 minutes.
- Uncover.
- Bake 30 minutes longer.
