Ingredients

  • 4 slices bacon
  • 1 c. chopped onion
  • 1 clove garlic, minced
  • 2 cans (15 oz. each) pinto beans
  • 1/2 c. water
  • 1/4 c. tomato ketchup
  • 1/4 c. molasses
  • 1 Tbsp. Dijon mustard
  • 1/2 tsp. powdered ginger
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Method

  • Slice bacon into 1/2-inch strips.
  • Saute bacon, onion and garlic for 5 minutes.
  • Drain beans.
  • Combine beans, onion mixture and remaining ingredients in a 1-quart casserole dish.
  • Bake, covered, at 350° for 30 minutes.
  • Uncover.
  • Bake 30 minutes longer.
