Ingredients
- 2 c. self-rising flour
- 1 1/2 c. sugar
- 2 eggs, slightly beaten
- 1 tsp. vanilla extract
- 1/2 c. salad oil
- 1/2 c. milk
- 1 c. blueberries
Method
- Combine flour and sugar in a large bowl; set aside.
- Combine eggs, vanilla, oil and milk.
- Make a well in the center of the dry ingredients.
- Pour in the liquid mixture.
- Stir until well mixed. Fold in the blueberries and stir 1 minute.
- Put batter into muffin tins, filling about half full.
- Bake at 375° for 25 minutes. Yield:
- 2 dozen.
