Ingredients

  • 1 box blueberry muffin mix
  • 1/2 stick oleo
  • 1/3 c. chopped pecans
  • 1/2 lb. cream cheese
  • 1/2 c. sugar
  • 1 egg
  • 3 Tbsp. lemon juice
  • 1 tsp. lemon peel

Method

  • Preheat oven to 350°.
  • Grease a 9-inch square pan.
  • Rinse blueberries from mix with cold water and drain.
  • Cut butter into mix with pastry blender or 2 knives.
  • Stir in finely chopped pecans.
  • Press into bottom of pan.
  • Bake at 350° for 15 minutes or until set.
  • Blend cream cheese and sugar until smooth in a large bowl.
  • Add egg, lemon juice and lemon peel.
  • Beat well.
  • Spread over baked crust.
  • Sprinkle with blueberries.
