Ingredients
- 1 box blueberry muffin mix
- 1/2 stick oleo
- 1/3 c. chopped pecans
- 1/2 lb. cream cheese
- 1/2 c. sugar
- 1 egg
- 3 Tbsp. lemon juice
- 1 tsp. lemon peel
Method
- Preheat oven to 350°.
- Grease a 9-inch square pan.
- Rinse blueberries from mix with cold water and drain.
- Cut butter into mix with pastry blender or 2 knives.
- Stir in finely chopped pecans.
- Press into bottom of pan.
- Bake at 350° for 15 minutes or until set.
- Blend cream cheese and sugar until smooth in a large bowl.
- Add egg, lemon juice and lemon peel.
- Beat well.
- Spread over baked crust.
- Sprinkle with blueberries.
