Ingredients

  • 2 c. crushed pineapple
  • juice of 1 lemon
  • 6 oz. pkg. Philadelphia cream cheese
  • 2 Tbsp. cherry juice
  • 1/2 c. sugar
  • 1 1/2 Tbsp. unflavored gelatin
  • 12 maraschino cherries
  • 1/2 pt. whipping cream

Method

  • Heat pineapple with sugar; add softened gelatin (dissolved in 1/4 cup cold water).
  • Stir until dissolved.
  • Add lemon juice; let cool.
  • Mash cream cheese and add finely cut cherries.
  • Add cherry juice.
  • Mix with pineapple and chill until slightly thickened. Whip cream and fold into pineapple mixture.
  • Mold and chill.
