- 2 c. crushed pineapple
- juice of 1 lemon
- 6 oz. pkg. Philadelphia cream cheese
- 2 Tbsp. cherry juice
- 1/2 c. sugar
- 1 1/2 Tbsp. unflavored gelatin
- 12 maraschino cherries
- 1/2 pt. whipping cream
Method
- Heat pineapple with sugar; add softened gelatin (dissolved in 1/4 cup cold water).
- Stir until dissolved.
- Add lemon juice; let cool.
- Mash cream cheese and add finely cut cherries.
- Add cherry juice.
- Mix with pineapple and chill until slightly thickened. Whip cream and fold into pineapple mixture.
- Mold and chill.
