Ingredients

  • 2 c. flour
  • 3 Tbsp. sugar
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 c. fresh or frozen blueberries (unthawed)
  • 1 c. 1% low-fat buttermilk
  • 3 Tbsp. plus 1 tsp. melted margarine
  • vegetable cooking spray
  • 1 Tbsp. sugar

Method

  • Combine flour and next 4 ingredients in a bowl; stir well. Add blueberries; toss well.
  • Combine buttermilk and melted margarine; add to dry ingredients, stirring just until dry ingredients are moistened.
  • Drop dough by heaping tablespoonfuls onto a baking sheet coated with cooking spray.
  • Sprinkle 1 tablespoon sugar evenly over biscuits.
  • Bake at 450°for 11 minutes, or until golden.
