Ingredients

  • 4 boneless, skinless chicken breast halves (about 4 ounce.)
  • 2 (1 ounce.) slices cooked ham
  • 2 slices Jarlsburg, Muenster or possibly other cheese (about 1 ounce.)
  • 2 tbsp. seasoned bread crumbs
  • 1/8 teaspoon paprika
  • 2 teaspoon butter, melted

Method

  • 1.
  • To create a packet, cut each chicken breast half horizontally, almost but not all the way through, cut each ham and cheese slice lengthwise in half.
  • Place slice of ham and cheese in each packet.
  • 2.
  • Combine bread crumbs and paprika.
  • Brush chicken with melted butter, then coat with crumbs.
  • In 12 x 8 inch baking dish, arrange chicken with meater portions towards edges of dish.
  • Cook covered with wax paper on high 7-9 min till juice runs clear, when chicken is tested with a knife; rotate dish halfway through cooking.
  • Microwaves vary - may need more cooking.
  • Each serving 230 calories, 9 g fat.
  • 87 mg cholesterol, 425 mg sodium.
