Ingredients

  • 4 c. fresh, peeled and diced apples
  • 2 c. brown sugar, packed
  • 1 1/2 c. black walnut pcs
  • 3 c. flour
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp soda
  • 1 c. vegetable oil
  • 1 tsp vanilla
  • 2 x well beaten Large eggs

Method

  • Mix apples, sugar, and walnuts in bowl and let stand for 1 hour.
  • Stir often to allow mix to make own juice.
  • Add in flour, cinnamon, salt and soda then add in oil, vanilla and Large eggs and stir thoroughly.
  • Stir by hand, not mixer.
  • Pour batter into greased and floured tube or possibly loaf pan.
  • Bake at 350 degrees for 1 hour, then at 300 degrees for 15 min.
  • Cold.
  • Remove from pan.
  • Serve with whipped cream as garnish.
