Ingredients

  • 1 (16 oz) pkg Penne Pasta
  • Creamy Southwestern dressing
  • lettuce leaves
  • 1 (15 oz) can black beans (rinsed & drained)
  • 1 (8 3/4 oz) whole kernel corn (rinsed & drained)
  • 1 sweet red pepper, chopped
  • 3 green onions, sliced
  • 1/4 cup chopped fresh cilantro

Method

  • Cook pasta according to package directions; drain.
  • Rinse with cold water and drain.
  • Combine pasta and 1 3/4 cups creamy Southwestern Salad Dressing, toss.
  • Chill.
  • Spoon pasta mixture onto a lettuce lined platter. Top with black beans and next 4 ingredients.
  • Serve with remaining dressing.
  • 6 servings
