Ingredients

  • 1 lb. ground beef
  • 1 1/4 c. chopped onion
  • 1 c. chopped green pepper
  • 1 (16 oz.) can drained black-eyed peas
  • 1 (16 oz.) can whole tomatoes, undrained, coarsely chopped
  • 3/4 tsp. salt
  • 1/2 tsp. pepper

Method

  • Cook ground beef, onion and green pepper in skillet over medium heat until beef is brown.
  • Stir to crumble beef; drain. Add remaining ingredients.
  • Bring to boil; reduce heat and simmer 10 minutes, stirring often.
  • If more liquid is needed, add tomato juice.
