Ingredients

  • 1/2 c. butter or margarine
  • 1/2 c. Crisco
  • 1 (8 oz.) pkg. cream cheese
  • 3 c. sugar
  • 6 eggs
  • 3 c. flour
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 (6 oz.) pkg. frozen coconut
  • 1 tsp. vanilla
  • 1 tsp. coconut flavoring

Method

  • Cream butter, shortening and softened cream cheese.
  • Gradually add sugar, beating on medium speed until light and fluffy.
  • Add eggs, one at a time, beating after each addition.
  • Combine flour, salt, baking powder and soda.
  • Add to creamed mixture, stirring until just blended.
  • Stir in coconut and flavorings.
  • Spoon batter into greased and floured 10-inch tube pan.
  • Bake 1 hour and 15 minutes at 350° or until done.
  • Remove from pan and cool completely.
