- 1 (No. 300) can black-eyed peas
- 1/2 lb. ground sausage
- 1/2 chopped green pepper
- 1/4 c. chopped onion
- 1 garlic clove, chopped or minced
- 1 (14 oz.) can tomatoes
- 1/4 tsp. pepper
- 1/4 tsp. oregano
- 1/4 tsp. rosemary
- 1 c. grated cheese
Method
- Brown sausage. Drain. In large skillet, combine sausage, green pepper, onion and garlic. Cook 5 minutes. Add tomatoes and seasonings. Pour in black-eyed peas including liquid. Cover and simmer slowly for 20 minutes. Serve with grated cheese on top.
