Ingredients

  • 1 (No. 300) can black-eyed peas
  • 1/2 lb. ground sausage
  • 1/2 chopped green pepper
  • 1/4 c. chopped onion
  • 1 garlic clove, chopped or minced
  • 1 (14 oz.) can tomatoes
  • 1/4 tsp. pepper
  • 1/4 tsp. oregano
  • 1/4 tsp. rosemary
  • 1 c. grated cheese

Method

  • Brown sausage. Drain. In large skillet, combine sausage, green pepper, onion and garlic. Cook 5 minutes. Add tomatoes and seasonings. Pour in black-eyed peas including liquid. Cover and simmer slowly for 20 minutes. Serve with grated cheese on top.
