Ingredients
- 1 lb. ground meat
- 2 (15 oz.) cans black-eyed peas with jalapeno peppers
- 2 c. cooked rice
- 1 (16 oz.) can tomatoes, drained (2 c.)
- 1 c. grated Cheddar cheese
- 1/2 c. minced onion
- 1 Tbsp. butter
- salt and pepper to taste
- green chilies (if desired)
Method
- Brown ground meat (ground turkey may be used) in skillet.
- Mix ingredients in order given:
- black-eyed peas, cooked rice, tomatoes, cheese, onion, butter, salt and pepper to taste.
- Add green chilies, if desired.
- Bake in a 9 x 13 x 2-inch baking pan in a 350° oven for 20 minutes.
- I usually top with more cheese.
