Ingredients

  • 1 lb. ground meat
  • 2 (15 oz.) cans black-eyed peas with jalapeno peppers
  • 2 c. cooked rice
  • 1 (16 oz.) can tomatoes, drained (2 c.)
  • 1 c. grated Cheddar cheese
  • 1/2 c. minced onion
  • 1 Tbsp. butter
  • salt and pepper to taste
  • green chilies (if desired)

Method

  • Brown ground meat (ground turkey may be used) in skillet.
  • Mix ingredients in order given:
  • black-eyed peas, cooked rice, tomatoes, cheese, onion, butter, salt and pepper to taste.
  • Add green chilies, if desired.
  • Bake in a 9 x 13 x 2-inch baking pan in a 350° oven for 20 minutes.
  • I usually top with more cheese.
