- 1 Link Andouille Sausage
- 1 whole (about 7 Oz. Size) Smoked Beef Sausage
- 1 Tablespoon Olive Oil Or Canola Oil
- 1 Small White Onion, Finely Diced
- 3 cloves Garlic, Minced
- 1 can (15 Oz. Size) Black Beans, Undrained (We Typically Use Unseasoned Black Beans)
- 2 Tablespoons Worcestershire Sauce
- 2 Tablespoons Salsa, Your Preference (We Use Homemade)
- 1 teaspoon Smoked Paprika
- 1 teaspoon Ground Cumin
- 1 dash Hot Sauce
- 1 cup Cooked White Rice (We Often Use Brown Rice)
Method
- In a large skillet, saute the sausages with olive oil over medium heat for about 5-10 minutes (until desired crispness).
- Next add in diced onion and garlic, saute for 3-5 minutes until fragrant and tender.
- Next add in beans and liquid, Worcestershire sauce, salsa, smoked paprika, cumin, and hot sauce, if using.
- Let this simmer for 5 minutes, then stir in rice.
- Let this simmer all together for an additional 5 minutes and serve!
- We often top ours off with a little shredded cheese.
