- 1 Tbsp. olive oil (120 cal.)
- 3 cloves garlic, minced
- 1/2 medium onion
- 1 medium green pepper, chopped
- 1/2 medium red pepper, chopped
- 1 Tbsp. Cajun vegetable seasoning
- dash of cayenne pepper
- black pepper to taste
- 1 (16 oz.) can tomatoes, drained (optional)
- 1 pkg. chicken bouillon in 3/4 c. water (10 cal.)
- 1 lb. smoked turkey sausage, thinly sliced or 1 lb. light turkey/pork sausage, browned
- 1 Tbsp. vinegar
- 2 (16 oz.) cans Progresso black beans
- 4 c. cooked white or brown rice
Method
- Saute garlic in olive oil with onion, green and red pepper. Stir in tomatoes and chicken broth.
- Add turkey sausage and vinegar.
- Simmer 5 minutes.
- Add black beans and simmer 5 more minutes.
- Serve over cooked white or brown rice.
- Serves 8.
