Ingredients

  • 1 Tbsp. olive oil (120 cal.)
  • 3 cloves garlic, minced
  • 1/2 medium onion
  • 1 medium green pepper, chopped
  • 1/2 medium red pepper, chopped
  • 1 Tbsp. Cajun vegetable seasoning
  • dash of cayenne pepper
  • black pepper to taste
  • 1 (16 oz.) can tomatoes, drained (optional)
  • 1 pkg. chicken bouillon in 3/4 c. water (10 cal.)
  • 1 lb. smoked turkey sausage, thinly sliced or 1 lb. light turkey/pork sausage, browned
  • 1 Tbsp. vinegar
  • 2 (16 oz.) cans Progresso black beans
  • 4 c. cooked white or brown rice

Method

  • Saute garlic in olive oil with onion, green and red pepper. Stir in tomatoes and chicken broth.
  • Add turkey sausage and vinegar.
  • Simmer 5 minutes.
  • Add black beans and simmer 5 more minutes.
  • Serve over cooked white or brown rice.
  • Serves 8.
