Ingredients

  • 2 (16 ounce) cans black beans (drained and rinsed)
  • 1 large tomatoes
  • 1 small onion
  • 1 green pepper
  • 1 celery rib
  • 1 ear of corn (or small can)
  • 1 cucumber (optional)
  • 1 12 teaspoons parsley
  • 1 12 teaspoons basil
  • 1 12 teaspoons cilantro (optional)
  • 1 teaspoon cumin
  • 14 cup olive oil
  • 1 teaspoon lemon juice
  • 1 dash salt
  • 1 dash pepper

Method

  • Cut up all veggies into tiny little pieces.
  • Add to black beans.
  • Mix in the spices, oil and lemon juice.
  • Refrigerate and serve with chips or over chopped lettuce or as a side dish with chicken or fish.
