- 2 (16 ounce) cans black beans (drained and rinsed)
- 1 large tomatoes
- 1 small onion
- 1 green pepper
- 1 celery rib
- 1 ear of corn (or small can)
- 1 cucumber (optional)
- 1 12 teaspoons parsley
- 1 12 teaspoons basil
- 1 12 teaspoons cilantro (optional)
- 1 teaspoon cumin
- 14 cup olive oil
- 1 teaspoon lemon juice
- 1 dash salt
- 1 dash pepper
Method
- Cut up all veggies into tiny little pieces.
- Add to black beans.
- Mix in the spices, oil and lemon juice.
- Refrigerate and serve with chips or over chopped lettuce or as a side dish with chicken or fish.
