Ingredients

  • 2 tablespoons orange juice
  • 2 tablespoons lemon juice
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon hot sauce
  • 2 (15-ounce) cans black beans, rinsed and drained
  • 1 cup cooked long-grain white rice
  • 3 plum tomatoes, seeded and chopped
  • 1 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 small purple onion, chopped
  • 2 green onions, sliced
  • 1 celery rib, diced

Method

  • Whisk together first 6 ingredients in a large bowl; add beans and remaining ingredients, tossing gently to coat. Cover and chill at least 1 hour.
