- 2 tablespoons orange juice
- 2 tablespoons lemon juice
- 2 teaspoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon hot sauce
- 2 (15-ounce) cans black beans, rinsed and drained
- 1 cup cooked long-grain white rice
- 3 plum tomatoes, seeded and chopped
- 1 red bell pepper, chopped
- 1/2 green bell pepper, chopped
- 1/2 small purple onion, chopped
- 2 green onions, sliced
- 1 celery rib, diced
Method
- Whisk together first 6 ingredients in a large bowl; add beans and remaining ingredients, tossing gently to coat. Cover and chill at least 1 hour.
