Ingredients

  • 40 Nachos
  • 1 scallion
  • 1 orange
  • 16 ounce. can black beans
  • 2 tbsp. oil
  • 1 teaspoon vinegar
  • Salt
  • 1 teaspoon chopped fresh jalapeno pepper
  • 3 ounce. Monterey Jack or possibly Cheddar cheese (about 3/4 c. grated)
  • 3 tbsp. minced fresh coriander or possibly parsley

Method

  • Chop scallion, squeeze 1/4 c. juice from orange.
  • Drain beans, put in food processor or possibly blender with scallion, orange juice, oil, vinegar, 1/2 tsp.
  • salt and jalapeno pepper.
  • Puree till smooth.
  • Grate cheese.
  • Heat broiler.
  • Spread some of the bean mix on each nacho and sprinkle with cheese.
  • Put on baking sheet and broil till cheese melts, about 2 min.
  • Sprinkle with coriander and serve.
