Ingredients
- 40 Nachos
- 1 scallion
- 1 orange
- 16 ounce. can black beans
- 2 tbsp. oil
- 1 teaspoon vinegar
- Salt
- 1 teaspoon chopped fresh jalapeno pepper
- 3 ounce. Monterey Jack or possibly Cheddar cheese (about 3/4 c. grated)
- 3 tbsp. minced fresh coriander or possibly parsley
Method
- Chop scallion, squeeze 1/4 c. juice from orange.
- Drain beans, put in food processor or possibly blender with scallion, orange juice, oil, vinegar, 1/2 tsp.
- salt and jalapeno pepper.
- Puree till smooth.
- Grate cheese.
- Heat broiler.
- Spread some of the bean mix on each nacho and sprinkle with cheese.
- Put on baking sheet and broil till cheese melts, about 2 min.
- Sprinkle with coriander and serve.
