Ingredients

  • 3-1/2 cups Flour
  • 2 teaspoons Baking Soda
  • 2 teaspoons Cinnamon
  • 4 sticks Butter
  • 1 cup Firmly Packed Brown Sugar
  • 2 cups Sugar
  • 2 whole Large Eggs
  • 2 teaspoons Vanilla
  • 3-1/2 cups Oatmeal (I Use Old Fashioned)
  • 1 cup Coconut
  • 1-1/2 cup Chocolate Chips
  • 1/2 cups Butterscotch Chips
  • 1-1/2 cup Rice Cereal
  • 1/2 cups Chopped Pecans

Method

  • Mix together the flour, baking soda, and cinnamon.
  • Beat together butter, brown sugar, and granulated sugar at medium speed until light and fluffy. Beat in eggs and vanilla.
  • At low speed, beat in flour mixture until blended. Fold in oatmeal, coconut and chocolate and butterscotch chips. Gently add rice cereal and pecans. Cover with plastic wrap and chill for 1 hour.
  • Preheat oven to 350F. Grease 2 baking sheets.
  • Shape dough into 1 inch balls. Place cookies 2 inches apart on prepared baking sheets.
  • Bake cookies until lightly browned around the edges, 10 to 12 minutes. Transfer to wire rack to cool.
  • Makes approximately 110 cookies. But make the whole batch and watch them disappear! ENJOY!
