- 3-1/2 cups Flour
- 2 teaspoons Baking Soda
- 2 teaspoons Cinnamon
- 4 sticks Butter
- 1 cup Firmly Packed Brown Sugar
- 2 cups Sugar
- 2 whole Large Eggs
- 2 teaspoons Vanilla
- 3-1/2 cups Oatmeal (I Use Old Fashioned)
- 1 cup Coconut
- 1-1/2 cup Chocolate Chips
- 1/2 cups Butterscotch Chips
- 1-1/2 cup Rice Cereal
- 1/2 cups Chopped Pecans
Method
- Mix together the flour, baking soda, and cinnamon.
- Beat together butter, brown sugar, and granulated sugar at medium speed until light and fluffy. Beat in eggs and vanilla.
- At low speed, beat in flour mixture until blended. Fold in oatmeal, coconut and chocolate and butterscotch chips. Gently add rice cereal and pecans. Cover with plastic wrap and chill for 1 hour.
- Preheat oven to 350F. Grease 2 baking sheets.
- Shape dough into 1 inch balls. Place cookies 2 inches apart on prepared baking sheets.
- Bake cookies until lightly browned around the edges, 10 to 12 minutes. Transfer to wire rack to cool.
- Makes approximately 110 cookies. But make the whole batch and watch them disappear! ENJOY!
