Ingredients
- 1 large eggplant
- 1 c. Ritz cracker crumbs
- 1 Tbsp. oleo
- 1 onion, chopped fine
- 1 egg, beaten
- 1/4 c. milk
- 1/2 c. diced cheese (optional)
Method
- Peel and dice eggplant.
- Boil 5 minutes.
- Drain in colander. Mix all ingredients in a 2-quart casserole dish and bake at 350° about 25 or 30 minutes.
