Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 5.25 oz goat cheese
  • 1/3 cup olive oil
  • 16 oz jar baby beets, drained, thinly sliced
  • 2 tbsp red wine vinegar
  • 1 tbsp fresh chives, finely chopped
  • None None baby arugula, to serve

Method

  • Preheat oven to 400°F. Line a baking tray with parchment paper.
  • Place puff pastry on prepared tray. Fold in each side to form a 1/3 inch border. Bake for 10-15 mins, until puffed and golden. Press down center halfway through cooking to remove air.
  • Combine goat cheese with 1 tbsp oil, season then spread over pastry. Arrange beet slices over top. Whisk together remaining oil and vinegar. Season. Drizzle over tart. Sprinkle with chives.
  • Serve with baby arugula.
