Ingredients
- 1 sheet frozen puff pastry, thawed
- 5.25 oz goat cheese
- 1/3 cup olive oil
- 16 oz jar baby beets, drained, thinly sliced
- 2 tbsp red wine vinegar
- 1 tbsp fresh chives, finely chopped
- None None baby arugula, to serve
Method
- Preheat oven to 400°F. Line a baking tray with parchment paper.
- Place puff pastry on prepared tray. Fold in each side to form a 1/3 inch border. Bake for 10-15 mins, until puffed and golden. Press down center halfway through cooking to remove air.
- Combine goat cheese with 1 tbsp oil, season then spread over pastry. Arrange beet slices over top. Whisk together remaining oil and vinegar. Season. Drizzle over tart. Sprinkle with chives.
- Serve with baby arugula.
