Ingredients

  • 1 c. yellow cornmeal
  • 1 c. milk
  • 2 eggs, slightly beaten
  • 3/4 tsp. salt
  • 1/2 tsp. soda
  • 1/2 c. salad oil
  • 1 (17 oz.) can creamed corn
  • 1 lb. ground beef
  • 1 lb. shredded Cheddar cheese
  • 1 onion, chopped
  • 4 to 5 jalapeno peppers, chopped

Method

  • Combine first seven ingredients in mixing bowl and set aside. Saute ground beef; drain and set aside.
  • In a greased 13 x 9 x 2-inch pan, pour half of cornmeal mixture.
  • Sprinkle with ground beef, onions, jalapeno peppers, then cheese.
  • Pour remaining cornmeal mixture over top.
  • Bake at 350° for 50 minutes.
  • Yields 8 to 10 servings.
