Ingredients

  • 1/4 cups White Vinegar
  • 18 cups Lime Juice
  • 2 cloves Garlic, Chopped
  • 2 Tablespoons Onion Powder
  • 2 Tablespoons Cilantro
  • 1/2 Tablespoons Salt
  • 1/2 Tablespoons Pepper
  • 1 pound Flank Steak Cubed
  • 1 whole Green Pepper, Cut Into 1 Inch Squares
  • 1 whole Red Pepper, Cut Into 1 Inch Squares
  • 1 whole Onion, Cut Into Wedges
  • 1 whole Zucchini, Cut Into 1 Inch Half Moons

Method

  • Mix the marinade ingredients together.
  • Add cubed meat.
  • Coat throughly and marinate for at least 2 hours, overnight preferably.
  • If using wooden skewers, soak in water for at least 30 minutes before assembling kabobs.
  • Remove meat from fridge 30 minutes before cooking.
  • Prepare kabobs by threading the meat and vegetables onto skewers.
  • Grill directly over high heat for 2 minutes on each side.
  • Reduce heat to medium and grill for an additional 15 minutes.
