Ingredients

  • 32 ounces steaks London broil, pounded to an 1/8 inch thick
  • 4 slices pancetta halved
  • 8 slices pepper roasted
  • 8 basil leaves large
  • 8 cocktail picks
  • 1 tablespoon olive oil
  • 24 ounces tomato sauce
  • 3 ounces black olives
  • pasta cooked, to serve

Method

  • Place steak flat on a board. Top each with pancetta, pepper and basil. Season to taste. Roll up and secure with a cocktail pick.
  • Heat oil in a medium frying pan on high. Cook rolled meat for 5 minutes, turning, until browned on all sides. Finish seam-side down.
  • Pour over tomato sauce and sprinkle with olives. Bring to a boil. Reduce heat and simmer 10-15 minutes, turning once, until cooked through. Serve with pasta.
