Ingredients

  • 2 medium onions, sliced
  • 2 Tbsp. bacon fat
  • 4 medium potatoes, cooked and diced
  • 2 c. diced leftover beef roast or pot roast
  • 1/4 c. milk
  • salt and pepper to taste

Method

  • Saute onions in bacon fat until soft.
  • Add potatoes and beef. Add just enough milk to moisten and seasonings.
  • Mix well; cover skillet and simmer until both sides of hash are well browned. Slide hash onto hot platter and garnish with parsley.
  • Serves 5.
