Ingredients
- 2 medium onions, sliced
- 2 Tbsp. bacon fat
- 4 medium potatoes, cooked and diced
- 2 c. diced leftover beef roast or pot roast
- 1/4 c. milk
- salt and pepper to taste
Method
- Saute onions in bacon fat until soft.
- Add potatoes and beef. Add just enough milk to moisten and seasonings.
- Mix well; cover skillet and simmer until both sides of hash are well browned. Slide hash onto hot platter and garnish with parsley.
- Serves 5.
