- 1 1/2 lb. ground beef
- 1/4 c. chopped pimento
- 1 c. sour cream
- 1/2 tsp. each salt and pepper
- 1/2 chopped onion
- 3 c. drained, cooked noodles
- 1 (12 oz.) can whole kernel corn, drained
- 1 c. cracker crumbs
- 1/2 c. shredded Cheddar cheese
- 1 can Cheddar cheese soup, undiluted
- 3 Tbsp. margarine
Method
- Saute beef until it loses its red color. Add onion and cook until tender.
- Stir in corn, soup, sour cream, pimento, salt, pepper and noodles.
- Spoon mixture into a lightly greased 2-quart casserole. Sprinkle with crumbs and cheese. Dot with margarine. Bake at 350° for 30 minutes.
- Makes 6 to 8 servings.
