Ingredients

  • 1 1/2 lb. ground beef
  • 1/4 c. chopped pimento
  • 1 c. sour cream
  • 1/2 tsp. each salt and pepper
  • 1/2 chopped onion
  • 3 c. drained, cooked noodles
  • 1 (12 oz.) can whole kernel corn, drained
  • 1 c. cracker crumbs
  • 1/2 c. shredded Cheddar cheese
  • 1 can Cheddar cheese soup, undiluted
  • 3 Tbsp. margarine

Method

  • Saute beef until it loses its red color. Add onion and cook until tender.
  • Stir in corn, soup, sour cream, pimento, salt, pepper and noodles.
  • Spoon mixture into a lightly greased 2-quart casserole. Sprinkle with crumbs and cheese. Dot with margarine. Bake at 350° for 30 minutes.
  • Makes 6 to 8 servings.
