Ingredients

  • 4 lb. boneless fresh brisket beef
  • 1 large onion, coarsely chopped
  • salt and black pepper
  • all-purpose flour
  • water
  • vegetables of choice

Method

  • Heat large heavy pot.
  • Add meat.
  • Brown on all sides without oil.
  • Pour off any fat.
  • Sprinkle onion around meat.
  • Cover tightly.
  • Cook over low heat for 1 hour.
  • Remove from heat.
  • Keep covered and let meat cool to lukewarm.
  • When cool, slice across grain for serving.
  • Return meat to pot.
  • Sprinkle with salt and pepper.
  • Cover and simmer 1 to 2 hours longer or until tender, turning slices once.
