Ingredients
- 4 lb. boneless fresh brisket beef
- 1 large onion, coarsely chopped
- salt and black pepper
- all-purpose flour
- water
- vegetables of choice
Method
- Heat large heavy pot.
- Add meat.
- Brown on all sides without oil.
- Pour off any fat.
- Sprinkle onion around meat.
- Cover tightly.
- Cook over low heat for 1 hour.
- Remove from heat.
- Keep covered and let meat cool to lukewarm.
- When cool, slice across grain for serving.
- Return meat to pot.
- Sprinkle with salt and pepper.
- Cover and simmer 1 to 2 hours longer or until tender, turning slices once.
