Ingredients
- 1 lb. lean beef
- 1 3/4 c. (14 oz. can) stewed tomatoes
- 3 Tbsp. soy sauce
- 1 tsp. ground ginger
- 1 Tbsp. cornstarch
- 1 Tbsp. sugar
- 2 Tbsp. oil
- 1 1/3 c. thinly sliced green pepper
- 1 1/2 c. coarsely chopped onion
Method
- Trim fat from beef; cut into 1/2 x 1/8 x 2-inch strips. Drain tomatoes;
- reserve liquid.
- Combine tomato liquid, soy sauce, ginger, cornstarch and sugar; mix well.
- Stir-fry beef in hot
- oil in a large skillet or wok over high heat; remove meat.
- Add green pepper and onion to skillet; stir-fry 1 to 2 minutes.
- Add beef,
- stewed
- tomatoes
- and
- tomato
- mixture to skillet.
- Stir. Cover.
- Cook 3 to 4 minutes.
- Makes 5 cups.
