Ingredients

  • 1 lb. lean beef
  • 1 3/4 c. (14 oz. can) stewed tomatoes
  • 3 Tbsp. soy sauce
  • 1 tsp. ground ginger
  • 1 Tbsp. cornstarch
  • 1 Tbsp. sugar
  • 2 Tbsp. oil
  • 1 1/3 c. thinly sliced green pepper
  • 1 1/2 c. coarsely chopped onion

Method

  • Trim fat from beef; cut into 1/2 x 1/8 x 2-inch strips. Drain tomatoes;
  • reserve liquid.
  • Combine tomato liquid, soy sauce, ginger, cornstarch and sugar; mix well.
  • Stir-fry beef in hot
  • oil in a large skillet or wok over high heat; remove meat.
  • Add green pepper and onion to skillet; stir-fry 1 to 2 minutes.
  • Add beef,
  • stewed
  • tomatoes
  • and
  • tomato
  • mixture to skillet.
  • Stir. Cover.
  • Cook 3 to 4 minutes.
  • Makes 5 cups.
