Ingredients

  • 1 1/2 lb. stewing beef Whole Foods 1 lb For $7.99 thru 02/09
  • 2 Tbsp. flour
  • 1 Tbsp. oil
  • 2 onions, chopped King Sooper's 1 lb For $0.99 thru 02/09
  • 3 cloves garlic, minced
  • 1 carrot, chopped
  • 1/2 tsp. dried oregano leaves
  • 2 bay leaves
  • 1 can (28 fl oz/ 798mL) Primo Plum Tomatoes
  • 1/2 cup red wine
  • 1/4 cup Primo Tomato Paste
  • 1 each: red and green pepper, chopped

Method

  • Toss beef with flour.
  • Brown in oil, in large saucepan over medium-high heat.
  • Remove from pan and set aside.
  • Cook onion, garlic and carrot for 5 minutes.
  • Stir in oregano, bay leaves, tomatoes, red wine and tomato paste.
  • Return beef to pot, bring to boil, reduce heat and simmer 1 hour, stirring occasionally.
  • Stir IN peppers.
  • Cook 45 minutes or until meat is tender.
  • Remove bay leaves and serve.
