Ingredients

  • 1 (15 oz.) can diced tomatoes
  • 1 can Ro-Tel
  • 1 (15 oz.) can pinto beans *
  • 2 Tbsp. olive oil
  • 1 tsp. minced garlic
  • 3 Tbsp. dried basil
  • 1/8 tsp. salt
  • 1/2 tsp. pepper
  • 8 oz. pasta (small size, i.e. shells, elbow)

Method

  • In a medium size pot, heat oil and saute garlic over medium heat.
  • Add tomatoes and Ro-Tel.
  • Stir.
  • Add basil, salt and pepper.
  • Cook for approximately 45 minutes, stirring every five minutes.
  • Add beans and simmer for 15 minutes.
  • Cook pasta according to package directions.
  • Toss with sauce.
  • Serves 4.
