Ingredients
- 1 (15 oz.) can diced tomatoes
- 1 can Ro-Tel
- 1 (15 oz.) can pinto beans *
- 2 Tbsp. olive oil
- 1 tsp. minced garlic
- 3 Tbsp. dried basil
- 1/8 tsp. salt
- 1/2 tsp. pepper
- 8 oz. pasta (small size, i.e. shells, elbow)
Method
- In a medium size pot, heat oil and saute garlic over medium heat.
- Add tomatoes and Ro-Tel.
- Stir.
- Add basil, salt and pepper.
- Cook for approximately 45 minutes, stirring every five minutes.
- Add beans and simmer for 15 minutes.
- Cook pasta according to package directions.
- Toss with sauce.
- Serves 4.
