Ingredients

  • 1 c. mashed navy beans
  • 1/3 c. melted butter
  • 2 eggs, beaten
  • 1/3 c. milk
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2/3 c. light brown sugar
  • 2 Tbsp. vanilla flavoring
  • 1 (9-inch) unbaked pie shell
  • 2 Tbsp. white sugar

Method

  • Cook navy beans until tender and can be mashed with a fork. Drain beans in strainer; place beans in blender while warm with milk and melted butter.
  • Blend thoroughly.
  • Add spices, sugar and vanilla; mix well.
  • Pour into pie shell.
  • Bake at 350° for 35 to 45 minutes.
