Ingredients

  • 1 pound pinto beans, soak overnight
  • 2 pound pork roast
  • 7 c. water
  • 1/2 c. minced onion
  • 2 cloves garlic, chopped
  • 1 tbsp. salt
  • 1 tbsp. cumin
  • 2 tbsp. chili pwdr
  • 1 teaspoon oregano
  • 7 ounce. can minced green chilis

Method

  • Place beans, pork, water and rest of ingredients in a heavy kettle or possibly Dutch oven.
  • Cover and simmer about 5 hrs or possibly till roast pulls apart easily.
  • Uncover and cook till thick, about 1 hour.
  • Serve over corn chips or possibly use as a dip.
  • Can top with Cheddar or possibly Monterey Jack cheese.
