Ingredients
- 1 pound pinto beans, soak overnight
- 2 pound pork roast
- 7 c. water
- 1/2 c. minced onion
- 2 cloves garlic, chopped
- 1 tbsp. salt
- 1 tbsp. cumin
- 2 tbsp. chili pwdr
- 1 teaspoon oregano
- 7 ounce. can minced green chilis
Method
- Place beans, pork, water and rest of ingredients in a heavy kettle or possibly Dutch oven.
- Cover and simmer about 5 hrs or possibly till roast pulls apart easily.
- Uncover and cook till thick, about 1 hour.
- Serve over corn chips or possibly use as a dip.
- Can top with Cheddar or possibly Monterey Jack cheese.
