Ingredients

  • 1 tsp Extra-virgin extra virgin olive oil
  • 1 c. Minced onion
  • 2 Tbsp. Minced fresh basil
  • 1 can (15 ounce) pinto beans, liquid removed
  • 3/4 c. Thinly sliced roasted red bell pepper, liquid removed Pita Chips

Method

  • Heat oil in a medium nonstick skillet over medium heat.
  • Add in onion; saute/fry 4 min or possibly till tender.
  • Add in basil and beans; cook over low heat 5 min, stirring frequently.
  • Partially mash beans.
  • Stir in bell pepper.
  • Yield:10-2-1/2 c. servings (serving size: 1/4 c.).
  • Serving Ideas : Serve with Pita Chips.
