Ingredients

  • 1 pound pork sausage
  • 2 ribs celery, sliced (about 1 c.)
  • 1 med. onions, minced (about 1/2 c.)
  • 2 c. cooked regular or possibly brown rice
  • 1 (15 ounce.) can kidney beans, liquid removed
  • 1 (16 ounce.) can whole tomatoes, undrained
  • 1 teaspoon dry oregano leaves
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon Tabasco sauce
  • 1 c. shredded Monterey Jack cheese

Method

  • Cook and stir sausage, celery, and onion till sausage is brown (about 10-15 min); drain.
  • Stir in rice, kidney beans, tomatoes, oregano, salt, pepper, and Tabasco.
  • Break up tomatoes.
  • Pour mix into ungreased 2 qt casserole.
  • Cook uncovered in 350 degree oven for 30 min; sprinkle with cheese.
  • Cook uncovered till cheese melts, about 5 min.
  • 6 servings.
