Ingredients

  • 3 c. sugar
  • 1/2 tsp. cream of tartar
  • pinch salt
  • 3 c. whipping cream
  • 1 c. white Karo syrup
  • 1 tsp. vanilla
  • 1 c. pecans

Method

  • Butter sides and bottom of heavy saucepan with butter.
  • Add sugar and 1 cup cream.
  • Cook while stirring till soft ball stage (forms a ball when dripped in cup of cold water).
  • Slowly add second cup of cream as mixture boils and you stir.
  • Cook to soft ball stage again.
  • Slowly add the third cup of cream as you cook and stir.
  • Cook to soft ball stage again.
  • Add vanilla and nuts. Stir until it begins to thicken.
  • Pour in a buttered pan.
  • Cool and cut into squares.
