Ingredients

  • 1 Tbsp. corn oil
  • 1 medium onion, chopped
  • 1 large clove garlic, chopped
  • 1 (8 oz.) can tomato sauce
  • 2 (15 oz. each) cans kidney beans or 3 c. red beans
  • 1 Tbsp. minced parsley
  • 2 Tbsp. green onion, chopped
  • 4 c. liquid (bean liquid and water)
  • salt and pepper to taste
  • 1 c. cooked small macaroni, cook 8 minutes
  • 2 Tbsp. imitation bacon chips or crisp bacon pieces

Method

  • In oil saute onion, pepper and garlic 5 minutes.
  • Add tomato sauce.
  • Simmer 30 minutes.
  • Add a little water as needed.
  • Stir frequently.
  • Add drained beans, parsley, green onion and liquid (bean and water).
  • Season to taste.
  • Cook for 10 minutes.
  • Stir in cooked macaroni and simmer 5 more minutes.
  • (Cook macaroni about 8 minutes.)
  • Sprinkle with bacon.
  • Serves 6.
