Ingredients

  • 12 oz. sweet Italian sausage, casings removed and meat crumbled
  • 1 c. coarsely chopped onion
  • 1 clove garlic, minced
  • 3 c. (packed) tender inside escarole leaves, rinsed, trimmed and torn
  • 1 (19 oz.) can cannellini beans with liquid
  • 1 (14 1/2 oz.) can whole tomatoes with liquid
  • 1 1/2 c. canned chicken broth
  • 1/4 tsp. fennel seed
  • salt and freshly ground pepper

Method

  • Crumble sausage into microwave-safe 3-quart glass casserole with lid.
  • Add onion and garlic.
  • Microwave covered on High power until sausage is cooked through, 6 to 7 minutes.
