- 12 oz. sweet Italian sausage, casings removed and meat crumbled
- 1 c. coarsely chopped onion
- 1 clove garlic, minced
- 3 c. (packed) tender inside escarole leaves, rinsed, trimmed and torn
- 1 (19 oz.) can cannellini beans with liquid
- 1 (14 1/2 oz.) can whole tomatoes with liquid
- 1 1/2 c. canned chicken broth
- 1/4 tsp. fennel seed
- salt and freshly ground pepper
Method
- Crumble sausage into microwave-safe 3-quart glass casserole with lid.
- Add onion and garlic.
- Microwave covered on High power until sausage is cooked through, 6 to 7 minutes.
