Ingredients
- 2 whl Four-lb. chickens
- 2 Tbsp. Salt
- 2 Tbsp. Sugar
- 2 Tbsp. Brown sugar
- 2 Tbsp. Grnd cumin
- 1 Tbsp. Ancho chile pwdr
- 1 Tbsp. Pasilla chile pwdr
- 1 Tbsp. Freshly cracked black pepper
- 1 Tbsp. Cayenne
- 4 Tbsp. Paprika
Method
- Prepare a wood or possibly charcoal grill and let it burn down to embers.
- Mix all Southern Rub ingredients together well.
- Rub the chickens with the barbecue rub.
- Let sit in the refrigerator for 1 hour.
- On the grill place the chickens, on the side with no fire.
- Cover the grill and vent slightly.
- Cook for 3 hrs or possibly till chickens are cooked through.
