Ingredients

  • 2 whl Four-lb. chickens
  • 2 Tbsp. Salt
  • 2 Tbsp. Sugar
  • 2 Tbsp. Brown sugar
  • 2 Tbsp. Grnd cumin
  • 1 Tbsp. Ancho chile pwdr
  • 1 Tbsp. Pasilla chile pwdr
  • 1 Tbsp. Freshly cracked black pepper
  • 1 Tbsp. Cayenne
  • 4 Tbsp. Paprika

Method

  • Prepare a wood or possibly charcoal grill and let it burn down to embers.
  • Mix all Southern Rub ingredients together well.
  • Rub the chickens with the barbecue rub.
  • Let sit in the refrigerator for 1 hour.
  • On the grill place the chickens, on the side with no fire.
  • Cover the grill and vent slightly.
  • Cook for 3 hrs or possibly till chickens are cooked through.
