Ingredients
- 2 pounds dried pinto beans
- 4 quarts water
- 1 pound salt pork, washed and diced
- 1 onion, chopped
- 1 clove garlic, minced
- 1/2 teaspoon salt
Method
- Sort and wash beans. Place in a large Dutch oven, and cover with water. Let soak overnight.
- Add remaining ingredients, and bring to a boil. Reduce heat; cover and simmer 3 hours or until desired degree of doneness, adding water if necessary.
