Ingredients
- 1 whole Large Boneless, Skinless Chicken Breast
- 4 whole Jalapeno Peppers
- 8 slices Bacon, Cut In Half
- Your Favorite BBQ Sauce
Method
- Preheat oven to 425 F. Line a rimmed baking sheet with foil and place a rack on top.
- Cut the boneless chicken breast into about 12 or 14 pieces, each about 1 1/2 inches thick.
- Slice each jalapeno pepper in half lengthwise, then slice it in half again across the width.
- Remove the seeds.
- Place one square of jalapeno pepper on top of each chicken bite.
- Wrap a piece of bacon around each piece of chicken and secure with a toothpick.
- Brush each bacon chicken jalapeno bite with BBQ sauce until all sides are covered and place on the rack in the baking sheet.
- Bake for 20-25 minutes or until chicken is cooked to 165 F and the bacon has crisped up but isnt burnt.
