Ingredients

  • 3/4 c. cornstarch
  • 1/4 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. water
  • 1 egg, slightly beaten

Method

  • In bowl, stir together first 5 ingredients.
  • Add water and egg; stir until smooth. Dip cut up vegetables, such as zucchini, carrots, onion, mushrooms or boneless, skinless chicken breasts, cut into 1-inch cubes.
  • Dip into mixture before placing vegetables or meat into hot oil.
  • Makes a wonderful light and crispy fried vegetable.
