Ingredients
- 1 c. plus 2 Tbsp. sifted plain flour
- 1/2 tsp. salt
- 1 slightly beaten egg
- 1 c. milk
- 2 Tbsp. oil
Method
- Beat just until well moistened.
- Dip vegetables in batter.
- Fry a few at a time.
- Stir once to separate.
- Drain on paper towels. Salt to taste if needed.
- Vegetables suggested are:
- okra, summer squash, yellow squash, zucchini, or anything you want to experiment with.
