Ingredients
- 250 g/8 oz fresh basil
- 1/3 cup (50 g/1 2/3 oz) toasted pine nuts
- 2 cloves garlic, crushed
- 1/3 cup (35 g/1 1/4 oz) finely grated Parmesan cheese
- 1/3 cup (80 ml/2 3/4 fl oz) olive oil
- salt and pepper
Method
1. Remove basil leaves from the stalks. Wash and dry the leaves and place them in a food processor with the pine nuts, garlic and Parmesan cheese. Process until finely chopped.
2. With the motor running, add the olive oil in a thin stream and process until well combined. Season, to taste, with salt and pepper.
