Ingredients

  • 2 quarts water
  • 1 cup dry white wine
  • 1 thickly sliced large onion
  • 1 leek, sliced
  • 1 carrot, coarsely chopped
  • 1 stick celery, chopped
  • 4 cups mixed chopped vegetables (broccoli, green beans, cabbage, potatoes, squash, bell peppers, mushrooms)
  • 6 -8 sprigs parsley
  • 1 bay leaf
  • 4 allspice berries
  • 1 tablespoon black peppercorns
  • 2 teaspoons dried bouquet garni
  • salt

Method

  • Combine all ingredients except salt in slow cooker.
  • Cover and cook on high for 3-4 hours.
  • Strain stock, discarding solids.
  • Season to taste with salt.
